It was a busy Tuesday as I prepared 3 tapas for the ladies of the Trefoil Guild in Malden. This is a society for Girl Guides over 18! There were 17 of us in all, off into the wilds where we sampled:
Wild Kimchi Hazel-Leaf Sushi by the Cleavers and Common Hogweed
Jack by the Hedge Pesto with Oat Crackers
Sparkling Elderflower Cordial (under a flowering Elder tree)

I had great fun making the sushi…I’ve used lime tree leaves with crayfish sushi before, as they’re really soft when young. they have a mild lettuce flavour.
Today I used hazel leaves, the biggest and freshest I could find. I’ve used these to wrap tiny hazelnut biscuits and cook over the fire pit before. They peel off to reveal a pretty leaf print biscuit baked in the leaf.
For sushi, I boiled the leaves for a couple of minutes til they changed colour to olive green and became soft. I added 3 tbsp of rice vinegar to the cooking water as well.



It inspired me to make my bottles pretty too!

We even found Watercress growing wild, and some tadpoles. (Which we did not eat…)
