Dandelion Delights


Here’s one of the tasty greens (actually yellows!) I collected this week…

I took the tallest dandelion flowers near the riverbank – the ones least likely to have been weed on! Although this time I cooked them, so there’s not much to worry about.

Had a lovely relaxing time pulling the petals out of half of these to add to a Dandelion, Hogweed stem and grated carrot superfood omelette.

Dandelion contains a compound called ‘bitters’, which helps with your digestion. It helps the gall bladder produce more bile to break down fats. That’s why it tastes so great with rich and fatty foods!

I also added whole dandelion flowers with the green sepals to a Meditterranean soup. I love the slight bitterness and mushroom texture.

You can deep fry them too and make fritters…not so healthy, but very tasty and children will then eat it as it is unhealthy enough for them!!

I chose not to do this as I didnt have enough oil. And it is ruddy unhealthy.

TOP TIP: MAKE SURE WHERE YOU PICK FROM HASN’T BEEN SPRAYED WITH HERBICIDES. COOK TO ENSURE BACTERIA FREE.
