If you would like to book either a half day Spring Foraging and Tapas experience or a Wild Kimchi foraging and making experience, check out the dates below.

If there is a group of you I’m quite happy to arrange a private event. I’ve run these events for birthday parties, walking groups, Scout groups and as training for outdoor activity providers.

Spring Foraging involves a relaxed 3 hour circuit walk in Leighton Buzzard, Bedfordshire. The pace is slow as we will be stopping to learn about native wild edibles and sampling 3 wild foraged tapas (made by my sweet self).

These courses involve:

• Foraging and the law
• Plant families
• Using all our senses to identify
• 3 wild foraged tapas
• Hazards

Make Your Own Wild Kimchi courses involve a short foraging walk where we will collect foraged wild greens for our kimchi. We then return to base camp nearby (usually the lovely Globe inn) where we create our own lacto fermented kimchi to take home. This will be 3 hours in total.

Lacto fermentation is an ancient way of enhancing and preserving food. You may well have tasted sauerkraut – this is a lacto-ferment. I’ll be teaching the best ways to create a tasty wild kraut you can add to soups, stews, sandwiches, or as a side.

Wild Kimchi course dates this year 2025 are:
